NZ Free Range, very lean, highest of quality steak, known for its tenderness. To cook, slightly oil the meat (NOT the pan!) season, then place in a very hot preferably heavy frying pan or BBQ plate, leave for 3 minutes, then turn only once leaving for another 3 minutes allow to rest and just like magic you have the most amazing, rare steak!
