Raised on open pastures our free range rare breed heritage pork, is cured using a traditional blend of NZ salt, sugar and spices to lightly season the meat.  Then airdried to 70% of its original weight to create the optimum flavour and tenderness.  Thinly sliced perfect to enjoy with mild flavours to relish the richness in each bite!
